CRISPY DEEP-FRIED SPINACH
4 cups peanut oil for frying
(10 ounce) package washed fresh spinach
salt and pepper to taste or Parmesan cheese
1. Heat the oil in a deep-fryer to 375 degrees F (190 degrees C).
2. Place a large handful of fresh spinach in a fryer basket, and submerge to cook for about thirty seconds. The fried spinach should be really dark green, light and airy.
3. Drain spinach on paper towels, and repeat with remaining batches. Add a little salt and pepper or Parmesan cheese to taste.
